About the Recipe
Sorghum, broadly known as Jowar, is an ancient grain. From weight loss to improved heart health, jowar has a range of health benefits. Jowar is rich in fibre & protein. It also contains high magnesium levels which helps maintain calcium levels in the body. It is packed with B vitamins, which help the body build new tissues and cells and potassium and phosphorus. Additionally, Jowar contains traces of zinc, copper, and over 20 micronutrients and high levels of antioxidants.

Ingredients
Sorghum Flour
Guacamole
Salsa sauce
Tomato puree
Diced mushroom
Red & yellow bell pepper chopped
Boiled black beans
Few cilantro
½ tsp coriander powder
½ tsp cumin powder
Coconut oil / A2 desi ghee for cooking
Rock salt to taste
Preparation
Make desired quantities of tortillas / Chapatis out of sorghum flour
Cut the veggies (bell peppers & onions) into strips
Heat ghee in an iron cast pan and sauté the peppers, onions and mushrooms for 8-10 minutes.
Sprinkle dry spices & rock salt, stir frequently to coat the veggies. Add tomato puree and water into it. The water will stop the spices from getting too dark. Stir well so that the mixture coats the vegetables well.
Lastly, add the boiled black beans to the veggie and stir them in
Assemble the tacos by dividing the filling among the tortillas.
Add cilantro, guacamole and salsa on top of the taco to give a yum filling.
